I’m hungry. I have no clue what I want to eat for lunch so I go scrounging around my kitchen looking for something quick, easy, and of course delicious. Often times I fail, but today, I struck gold!
I knew I had some leftover cooked chicken in the fridge from a roasting chicken I had cooked in the crock pot yesterday. Add all these things together and what do you get!?
Buffalo Chicken Cheddar Grilled Cheese!
The ultimate in ooey gooey deliciousness combined with a nice spicy “grown up” kick. Now this was EXACTLY what I was looking for to keep me going until dinner!
Just saute up some leftover cooked chicken and pour in some Frank’s Hot Sauce. Let it all heat up together for a few minutes while you butter up some bread for your grilled cheese. Cut a few slices of cheddar if you have a chunk handy, or you can experiment with the typical on-hand American cheese or some grated cheddar too. Start building your grilled cheese and add a good heaping amount of the warmed buffalo chicken right in the middle and you’re on your way to a happy lunch!
